While traveling to Colorado for business, I wanted to try this restaurant with great review on my way back to the airport. It was easy to find, easy to get to. Elegant and modern exterior with some outdoor seating.
The great thing about the location of this restaurant is that they are right next to a large indoor garage. And guess what? They have complimentary parking for The Bindery customers! They have around 55 parking spots for restaurant customers, which was great!
The inside was much bigger than I expected it to be. Very large, open space with lots of natural lights coming in from many windows. High ceiling creating the feeling of even bigger space. The interior was modern and industrial, simple design with pops of color from artworks on the wall. They had a bakery section upfront, where you could by some baked goods and desserts.
They had fully stocked bar with counter seating. They had hooks for bags and outlet for your mobile devices right under the counter table. Nice! They had open kitchen right behind the bar so you can see them work! The interior looks a bit fancy, but lunch crowds were quite casual.
They offer new American plates, pastries and more. The lunch menu is much smaller than their more enticing dinner menu. After some consideration, I decided to go with Charbroiled Lamb Burger ($16) on a challah bun with lettuce, tomato, red onion, feta tzatziki. It is usually served with a side of mixed greens, but you can substitute it with fries for additional $3, which is what I did.
The buns were super fluffy. Tomato was placed on the bottom, making the bottom bun to get soggy pretty fast… I would have put the lettuce on the bottom, instead of tomato to keep the bun nice and dry. Patty was packed with flavor with amazing seasoning and spices that went perfectly with the tzatziki. A bit of exotic flavor. The patty was thick and meaty, very satisfying! Fries were so good and addicting. Very potato-y, lightly fried and just the right amount of seasonings. It was really good dish!
They have three unisex bathrooms in the back corner. They were all nice and big, and one of them had urinal!
The service was very polite and professional. Staffs are always around on the floor, but they won’t bother you unless you need something. I am sad I didn’t get to try their dinner menu, but if I ever go back to Colorado, I would love to try their food again!
